1 tbsp. grated orange peel
1/2 cup fresh orange juice
1/4 cup chopped fresh mint leaves
2 tbsp. sesame seeds, toasted
1 tbsp. olive or vegetable oil
1 tbsp. coarsely chopped garlic
1/2 tsp. salt
1/2 tsp. coarsely ground pepper
In small bowl stir all ingredients. Use for a marinade with choice of Chicken or Turkey.
This marinade may be made up in various quantities, depending on how much turkey or chicken you
wish to cook. About 5 pounds of turkey or 4 pounds of chicken will use the following proportions. (If the turkey
or chicken you're using has any skin, remove it before marinading.)
½ cup lemon juice
½ cup Worcestershire sauce
3 cups red wine (cheap is fine!)
4 cups apple cider vinegar
2 tbsp onion powder
2 tbsp paprika
3 tbsp parsley
2 tbsp black pepper
Combine all ingredients in a covered containerand stir. Insert meat into container. Add enough
water so that liquid totally covers the meat. Cover container and place in refrigerator.
Let it sit for at least 4 hours. 4 hours. Take container to grill. Remove meat portions from container
and place directly over fire
USE IT TWICE. If you are cooking with a smoker which uses a water pan or steaming pan,
after you have removed the meat from the container, pour the liquid into the water pan. Extra
flavor will steam into your meat as it cooks.
½ cup Dijon-style mustard
¼ cup soy sauce
2 tbsp.olive oil
½ tsp.ground ginger and ½ tsp.garlic powder
Combine all ingredients in large bowl or bag. Add turkey. Marinate for 30 min. to overnight.
Refrigerated. Grill, brushing with leftover marinade.
3/4 cup packed brown sugar
1 tsp. ground ginger
2 tbsp. rum
1 cup pineapple juice or orange juice
Fresh pineapple or orange slices (optional)
Combine all ingredients; add turkey or chicken , marinate 30 minutes or overnight. Grill, brushing with additional
marinade. In the last 4 to 5 minutes of grilling top steaks with pineapple slices or fresh orange slices and brush
with marinade.
2 cups white wine
2 tsp. fennel or anise seed, crushed
2 ½ tsp. brown sugar
2 clove garlic, crushed
2 tsp. soy sauce
½ tsp. black pepper
6 tsp. lemon juice
½ cup oil
3 scallions, chopped
1 tsp. salt
Mix all ingredients, other than scallions, in blender . Process for 2 minutes. Add scallions and pour over the
turkey. Yield: 3 1/2 cups. For a diferent taste you may add a pinch of nutmeg
½ cup soy sauce
¼ cup water
3 tbsp.olive oil
3 gloves garlic, crushed
½ tsp. black pepper
2 tsp.salt
2 tsp. white sugar
1 tsp.of ground cinnamon
½ tsp. ground cloves
1 tsp. ground ginger (or anise)
Mix all ingredients together well and evenly coast surfaces of turkey parts or meats. Marinate
at least 4 hours. Yield: 1 cup
1/2 cup lemon juice
1/4 cup vegetable oil
1/2 tsp. salt
1 clove garlic, mashed
1/2 tsp. black pepper
1/2 tsp. thyme leaves
1 tsp. Worcestershire sauce
2 tbsp. onion, finely chopped
Mix all ingredients and let set for 2 hours to allow flavors to blend,before adding meat.
1/4 cup soy sauce
1/2 cup pineapple juice
1/4 cup cooking sherry
1/4 cup brown sugar
3/4 tsp. minced garlic
Mix all ingredients. Marinate meat at least 2 hours before cooking.
